Three essential one pan camping recipes

Outdoor cooking shouldn’t be a chore when you are enjoying life on the road, but sometimes the thought of organising the ingredients, preparing the dish, and then cleaning up can seem overwhelming. 

 

The following one-pan recipes have been specifically chosen to provide you with a hearty meal whilst reducing the amount of time and ingredients needed. They can be cooked on a campfire, camp stove or hot plate and as such, can be consumed wherever your nomadic life has taken you.

 

Ingredients

1 can beans

1 can tinned tomatoes

Eggs

Chicken thigh fillets

Potatoes

Carrots

Sweet potato

Onions

Staples (olive oil, salt, pepper, your favourite herbs and spices)

Optional: bread or tortillas

 

Meal 1: Lunch

Eggs and beans are healthy, filling and nutrient-dense.

Add 1 can of beans, 1 can of tomatoes and your choice of herbs and spices (we such cayenne pepper, paprika and a little salt and pepper) to your pan with a little olive oil.

Stir whilst you bring the mixture to a gentle boil and continue to stir until the sauce thickens.

Make 4 small wells in the bean mixture, and crack an egg into each well.

Cover your pan with a lid and cook for two to four minutes (depending on how you prefer your eggs).

If you have brought tortillas, while the eggs are cooking, warm the tortillas in foil on the hot plate or campfire.

Serve.

Meal 2: Dinner

Chicken and Vegetables

This one-pan chicken and vegetable dish is simple, easy and delicious. Best of all, you can use the leftover potatoes in your breakfast the next day.

Wash the vegetables and cut them into large chunks.

Pat dry the chicken thighs and cut them into quarters or smaller.

Place all ingredients including your favourite herbs and spices (we suggest sage, thyme or paprika and a little salt and pepper) into a pan, and drizzle with a little oil.

Check your meal every 15 minutes or so to turn the chicken and vegetables, ensuring that all of the ingredients are evenly cooked.

Once the chicken has cooked through, it is time to serve.

Be sure to store a few of the extra potatoes and onions for tomorrow morning’s breakfast!

Meal 3: Breakfast

Potato and Egg Scramble

 

Using the leftover potatoes from last nights dinner, start the morning with a filling, one pan, potato and egg scramble.

Add a little oil to your pan and add the leftover potatoes.

Stir the potatoes until they are warm and starting to break apart.

Add a little more oil to the pan.

Scramble the eggs in a bowl and pour them into the pan.

For additional flavour, add in a few of your favourite herbs and spices from your pantry (we suggest a little cayenne pepper if you like your eggs spicy).

Allow the eggs to cook through.

If you have tortillas or bread, heat a few slices to serve with the scramble.

With a few ingredients, and just one pan, you can enjoy three delicious meals whilst you are on your outdoor adventure.
